sicky

as i write this i am laying on my couch.
i got a terrible cold this weekend.
i think i have used more Kleenex's this weekend alone,
then i have in the past six months.

my nose is stuffy.
i can't breathe
i am coughing my little lungs out.
being sicky is no fun.

but i decided to make the best out of it.
i'm going to read a good book.
watch my favorite movies.
write in my journal.
read the book of mormon.
and listen to the fireside i missed yesterday.

boy am i glad i did.
it was just what i needed.
made me so happy.
you should watch it too!

"it is day by day that we work out our plans for the future."

"its one day at a time that we work out our imperfections"

"out of small things that proceeding which is great!"

i love the little things that make us have a whole different outlook on life, and our day :) this message brightened my not so good sick day. to a wonderful day.

also i never posted the second recipe.
i made it up, so i will just explain in my best "recipe form" how to do it..

MOCK BBQ CHICKEN PIZZA

  • chicken
  • tortillas
  • bbq sauce
  • cheese
  • green peppers
  • tomatoes
  • basil
clean and cube your chicken. cook on stove top. i put a little of bbq to taste. then place your tortillas on a sheet and put them in the oven {325} for about 1.5 min, flip them to the other side for 1.5 min. take out of oven. spread bbq sauce {to your liking} on each of the tortillas. sprinkle chicken, cheese, veggies, a little bbq sauce and basil. then bake for about 5 minutes or until cheese is melted and tortillas is crisp to your liking.

{sorry that was terrible directions but i just kind of made this yummy recipe up!}

it took about 20-30 minutes from preparation time to eating! i loaded mine with veggies and made it low cal so it was under
300 calories!

{sorry they're blurry, thank you cell phone!}
i know that i did not give amounts of the food.
but just depending on how many you are making i would just eye it! i used about 6 oz of chicken to make three. and about 2 tablespoons of bbq sauce on each one! Just make it how you like it :)

happy monday everyone!!

xoxo
