garden salsa






Every summer I become even more addicted then I already am to chips and salsa. Hello, homemade salsa! This year i jazzed it up and changed my 'recipe' (i say 'recipe' because i kind of just throw everything together with no measurements} 

fresh garden tomatoes 
(i boil mine then let them soak in cold water in the sink so the skins easily peel off. thanks mama Shippen for teaching me your ways!)
green chili's
jalapeno
green pepper
cilantro
green onions
crushed red pepper
lime juice
pepper to taste

i also like to throw some black beans and avocado into my personal bowl!

my favorite dish


this is my all time favorite dish.
so i thought i would be so kind to share with you all.
with step by step ashley instructions.

let's cook.
first off wash your hands!  i like to place all of my ingredients in the same area. and to make sure i have everything just in case i have to run to the store. these two recipes take a little bit of time. but are SUPER easy.


You'll start out by making the Chicken Romano.

You put the oil in a large pan and cook it about half way through until it starts to get brown. While the chicken is starting to cook I start to cut up the onion. It calls for 1 onion, but since I was making only two chicken breast I used a half. Once the chicken is starting to get brown remove it from the pan, set it aside, and drain.

Saute your onions, then add back the chicken,
 as well as the chili sauce and oregano.
Cover your pan.

Set your timer for 30 minutes.
Your chicken needs to simmer on low for at least 1/2 hour.


Meanwhile, start to boil water, then add your fettuccine.

While the pasta is cooking:
in a separate bowl add the cream, parsley,
 Parmesan cheese and mix it all together.
My mom puts the butter in a ceramic bowl(that she puts the pasta in) and puts it in the oven so the butter can melt and that way the bowl keeps the pasta warm while you're eating. Since it's summer time i just melt the butter in the microwave (so i don't have to turn on the oven) and pour it in the bowl. Then once your pasta is cooked, drain it & add to the bowl. Pour the Alfredo mixture over it and stir well.

PS i really like to put a little of
the Romano sauce on top of my pasta.

Bevie’s Chicken Romano

Ingredients:


1-5 Lbs. boneless, skinless chicken breasts
1 Onion, halved and sliced
2 12-oz. bottles of Heinz chili sauce
2 tsp. Oregano
Parmesan Cheese


Directions:

1. Fry chicken in large cast-iron skillet with 4 T oil until lightly brown, drain.
2. Remove chicken from skillet, sauté onion, then put chicken back in skillet
3. Add chili sauce, oregano and salt & pepper to taste
4. simmer ½ hour or longer on low
5. Sprinkle generously with Parmesan

**Bev’s Notes** Serve with Fettuccine Alfredo!

Bevie’s Fettuccine Alfredo

Ingredients:
1 Box fettuccine – uncooked
1 Cube melted margarine (or butter)
1 C. Whipping cream
1 ½ C. Parmesan **Bev’s notes** Make sure it’s Kraft!
1 T. Fresh Parsley

Directions:

1. While pasta is cooking, melt butter **Bev’s Notes** Melt butter in large ceramic serving bowl in the oven, that way the bowl is heated!
2. Combine cooked pasta in butter
3. In separate bowl, combine whipping cream, Parmesan and parsley
4. Add mixture to pasta, combine and serve.

d.i.

once upon a time i decided to be
domestic and went to the d.i. 
with a few things in mind.. 
and came out with these things..










and i came up with this!
after a little spray painting, cleaning, 
and printing pictures 
wa la! and i was done.

i was so pleased with the results.
i had one little picture on that wall 
and felt like it was so empty and had a vision.
and i made that vision come to life.
isn't that the best? when something actually
turns out the way you had planned in your head.
woot! go me.

Low-Cal Banan Muffins

Low-Cal Banana Muffins

25 Minutes to Prepare and Cook

 Ingredients
    3/4 cup all purpose flour
1/4 cup whole wheat flour
1 Tbs baking powder
1/2 tsp baking soda
1/8 tsp salt
1 cup mashed bananas
1/4 cup sugar
1/4 cup applesauce
1 egg
1/2 tsp vanilla extract

 Directions
Preheat oven to 350 degrees F. Grease muffin tin or use paper muffin liners.
Combine flour, baking powder, baking soda, and salt.
In a separate bowl, beat banana, sugar, egg, and vanilla. Stir in applesauce. 
Stir in flour mixture.
Pour batter into muffin cups. About 3/4 full.
Bake for 15-20 minutes or until a toothpick inserted in the center of the muffin comes out clean.
If you use paper liners, the muffins stick to the paper until they have set awhile.
Makes 12 servings

MY NOTES:
My oven was really hot so I only cooked them for about 13 minutes.
and i didnt have wheat flour, so i just made it all with white.

house wife.



i have magically turned into a house wife the past week.
i have the table set and dinner on at six.
laundry done.
dishes done.
house clean.
errands ran.
etc.


its amazing how much you don't realize that mom's do until you have to do it all yourself. 


so i must share.
tonight i made this.
with a salad to the side.
and yummm. it was too good to stay a secret.

so i was visiting my friend em last night

& then she purchased the spider/broom lookin things at the craft store.

so.dang.cute.
i will make this one day when i have my own home.

cookin. & birthdays.

Chel is starting to do french fridays.
which means she is cooking her way through a cookbook.
and she asked if i would sometimes 'help' her.
not sure how much help i was..
but this is how it turned out.
and let me tell you, it was delish.
we (meaning SHE) cooked for some of our guy friends.
they pretty much loved it.
and so did i.

Marie-Helene’s Apple Cake
it was mazing.


oh &
mister nathan had a birthday.
so his mama had us over for a little surprise cake and ice cream fest.
well needless to say we had the cake and ice cream before he arrived.
he was late to his own party.
homemade peach ice cream. was the bestest.

Raspberry Fluff

Bevie’s Raspberry Fluff



Ingredients:

1Small box Jell-o brand raspberry jell-o
1Box non-instant tapioca pudding
1Box non-instant vanilla pudding
3 C.Water
12 oz.Cool Whip (not lite)
1 C.Frozen Raspberries

Directions:

  1. In large pan, stir together pudding mixes and water, bring to boil stirring frequently. Boil until thickened (about 10 minutes).
  2. Let cool 5-10 min. in pan, cover with cling wrap.
  3. Refrigerate overnight.
  4. Fold in cool whip and raspberries
Such a great side dish. and its delish.make it. i dare you.

creamy chicken pasta

got this fabulous recipe off of one of my bloggity friends blogs.
can you say YUMMMMMYYYYY??
try it. you won't regret.

Ingredients:
1 lb boneless, skinless chicken breasts (3-4)
Montreal Steak seasoning
1/2 pound penne pasta
4 tablespoons butter
4 tablespoons olive oil
2 cloves garlic, minced
½ cup chicken broth
1 (8-ounce) can tomato sauce
1 cup heavy cream
1/2 to 1 tsp salt & pepper (to taste)
1 tablespoon fresh parsley, chopped
6-8 fresh basil leaves, chiffonaded

Pound chicken so it's an even thickness all around then season both sides with Montreal Steak seasoning. Preheat skillet for medium heat and add in 2 Tbls of butter and 2 Tbls of oil. Once it's hot, add chicken breasts and cook for 5 mins each side. You can also grill the chicken. Set chicken aside to cool and start your noodles. In a large pot, boil water with 1 tbsp salt. Add 1/2 lb penne pasta noodles and boil according to package directions. Heat 2 tablespoons butter and 2 tablespoons olive oil in the skillet over medium heat. Add the garlic and cook, stirring occasionally, until garlic is tender, but do not let the garlic turn brown (about 3-5 mins). Add the chicken broth to the pan and allow to reduce by half. Meanwhile, slice chicken. Once the broth has reduced, stir in tomato sauce. Add the heavy cream and stir well to combine. Season with salt and pepper to taste. Turn heat to low. Chop the parsley and basil, add to sauce and mix well. Drain pasta and add to sauce. Stir well to coat. Serve pasta on plates, top with sliced chicken.
Serves 4

December is here..



yay for December. Although I love the snow I am not too excited about driving to work each morning in it! But I love December and the Spirit of Christmas. Here are some things i've been up to this past week.
